We’ve all been there: you’re finally living on your own, and you’re still getting into the swing of cooking for yourself. But when you’re a busy Working Girl, sometimes making a huge meal is just not going to happen. You’re running to meetings and events, and before you know it, it’s 8 p.m., and you still haven’t had dinner. You begrudgingly spend your hard-earned money on takeout, or, even worse, grab that leftover pizza that’s been sitting in your fridge for a little too long, turn on Netflix and call it a night (oh wait, is that just me?).
Good news Working Girls: cooking for yourself can be easy, as long as you have some ideas. Enter my favorite dish: the Avocado & Goat Cheese Salad. A recipe I discovered – and have slowly, but surely made my own over the years – online, it’s become a favorite in my household and amongst my friends. It’s easy. It’s filling. And man oh man, it’s tasty. So what are you waiting for? Get cooking!
1) Slice up the avocado and add to the spring mix along with as much goat cheese as you want. When I use an entire bag of spring mix, I also usually use the whole container of goat cheese.
2) Squeeze lime juice on the mixture, and again, add as much olive oil as you’d like. I find that usually 1/8 of a cup is enough. But always add less first, and adjust to your liking.
Over time you’ll master the art of making the perfect Avocado & Goat Cheese Salad that suits you. Like a little meat in your salad? Steak strips or chicken will kick things up a notch. Not a fan of goat cheese? Feta works just as well. Unfortunately, this entrée doesn’t make for great leftovers. The recipe I provided above is for two people, so if you’re just mixing a salad up for yourself, simply halve the recipe.
